Pol roti in Sinhalese translates to coconut flatbread is a very popular item served for breakfast in Sri Lanka.
It is really easy to make and can be done in different ways. People usually add water or coconut water to the dough, however, I make my roti by adding coconut milk to the dough to give it more flavor and texture.
Ingredients:
2 cups all-purpose flour
1 cup of grated coconut
1 ¼ tsp of salt
½ tsp of sugar
¼ cup of coconut milk
½ cup of water
Directions:
1: In a large bowl, add the flour, grated coconut, salt, and coconut milk and combine well.
2: Add the water gradually into the mixture and knead it till it forms a soft dough (Water amounts may vary on the type of flour you are using). Add 1 or 2 more tbsp. of water if needed. The dough should come together, but still, have dry spots on the surface. If you add too much water, sprinkle in a little extra flour and lightly knead it into the dough. Do not over-knead the dough. Shape the dough into a rough ball and transfer it to a flat surface.
3: Divide the dough into 6-8 equal parts depending on the size you prefer your roti to be and lightly roll each of them into a small ball.
4: Take each dough ball and flatten them into a disc on a flat-floored surface using the palm of your hand or rolling pin. You can also roll out the entire dough on a flat surface and then cut perfect circles using a round cutter. Re-roll the scraps and cut more roti till there is no leftover. The last bits of the leftover can be turned into a ball and flattened into its own shape.
5: Preheat a non-stick skillet over medium-high heat during the rolling process place each of the flattened roti on the dry pan and cook each side for about 2-3 minutes until it starts developing brown spots. Repeat the same on the other side and remove from heat. Rub some butter on top of the warm roti as soon as you remove it from the pan (optional). Serve the roti warm with a curry or with, jam, honey, and Nutella as a sweet breakfast!
TIPS
If there is any leftover, place them between parchment paper and keep them in the freezer.
